The Paralegal is responsible for supporting the General Counsel and the Senior Paralegal in a wide variety of functions, including administrative functions, that support the department. They will be involved in civil and criminal litigation, property management, liquor licensing, as well as the project management functions of the Legal Department. This individual will be responsible for confidential and time-sensitive material. The successful candidate should be familiar with restaurant operations, practices and procedures.


ESSENTIAL REQUIREMENTS & KEY RESPONSIBILITIES
• Work with outside licensing vendors and/or outside counsel and other departments to process alcohol and business licenses for new restaurants and license renewals. This will include the coordination of fingerprinting for company executives, as required for licensing
• Formulate and prepare correspondence (letters, memoranda, and reports) to internal and external parties
• Organize, schedule and plan meetings to ensure maximum efficiency of General Counsel’s time
• Draft and review contracts for restaurant vendor scopes of work
• Monitor incoming service of process documents and coordinate with other departments for collection of records to meet submission deadlines
• Maintain outside counsel billing. Review and submit invoices for approval and payment
• Maintain outside counsel budget report workbooks
• Assist accounting on utility accounts for new restaurants
• Prepare, compile, and distribute information and materials for meetings and presentations
• Compile, review and process expense reports
• Projects as assigned by the General Counsel, to include legal administrative and project management. Maintain law department subscription renewals
• Manage department distribution emails


SKILLS AND EDUCATION
• Hospitality industry experience as a corporate paralegal is required
• Associates degree or its equivalent with at least 4 years of experience in the field or in a related area required
• Experience with civil and criminal litigation required
• Experience with leases and retail real estate development and property management required
• Ability to bring project tasks to completion in a timely manner by coordinating all parties involved, including internal and external stakeholders
• Experience with liquor licensing preferred
• Strong organizational and time management skills, as well as excellent verbal and written communication skills
• Ability to learn and retain new information.
• Has the ability to shift gears quickly, meet deadlines, and work in a fast-paced environment
